The Chalonnaise, though also known for Chardonnay, sees great use of Pinot Noir and Aligoté, with a focus on freshness and vibrancy. The village is tucked into a fold in the landscape at roughly 270 meters above sea level, surrounded by cereal fields, orchards, and scattered vineyard parcels — countryside that looks and feels far removed from the polished estates of the Côte d'Or just 20 kilometers north. Soils here are clay-limestone, typical of the Chalonnaise, with the limestone content high enough to give the Gamay a texture and structure more commonly associated with Pinot Noir. Southeast-facing slopes keep ripening steady; the altitude keeps the wine from going soft. This is Gamay with Côte d'Or sensibility, made in a corner of Burgundy few people think to look.

The Wine

100% Gamay, hand-harvested and fermented whole-cluster in fiberglass tanks. Maceration runs 10 days with minimal extraction, no punching down, no pumping over, which gives the tannins their fineness. Aged 9 to 12 months in old Burgundy barrels between 5 and 15 years old. Zero added sulfites, no fining, no filtration. The 2023 growing season was generous and consistent across Burgundy, producing ripe, pure fruit without the concentration fatigue of some warmer vintages. Fresh cherry and raspberry on the nose, a thread of iron and dried herbs in the middle, dry and precise on the finish. This is not fruit-forward Gamay and not a wine for casual chugging; it's structured, site-specific, and benefits from a slight chill and something on the plate.

The People

Naïma and David Didon founded their domaine in 2017, acquiring a 2-hectare parcel above Chassey-le-Camp called Les Vignes Blanches. For David, the domaine was the culmination of 20 years as chef de culture at Domaine de Montille in Volnay, one of the Côte de Beaune's benchmark estates, where he oversaw the conversion to biodynamics. His training goes back further, to the agrobiology school in Beaujeu, where he studied nature protection and biodynamic agriculture. The domaine is certified biodynamic, plowed with horses in early season to protect soil structure, and vinified with complete non-intervention: native yeasts throughout, nothing added at any stage, no fining, no filtration. Production is small, somewhere between 5,000 and 7,000 bottles annually across a range that includes Aligoté, Pinot Blanc, and this Gamay.

Food Pairing

The structure here handles food better than most Gamay. Everywhere else in the region the grape is confined to the regional Bourgogne Aligoté label; here it has its own name on the map, promoted from Bourgogne Aligoté de Bouzeron to full village status in the late 1990s after a campaign three growers started in 1974 and Aubert de Villaine, co-director of Domaine de la Romanée-Conti and a Bouzeron resident since the early 1970s, carried across the line. From 1973 he selected specifically for Aligoté Doré, the older, lower-yielding, golden-berried strain, rather than the more productive green-skinned Aligoté Vert. The appellation covers 62.47 hectares between 270 and 350 meters, facing east and southeast, on white marls from Oxfordian limestone up top and brown marly soils from Bathonian limestone lower down. The slopes are steep, the soils thin, and the Aligoté takes the upper ground.

The Wine

100% Aligoté at 12%, from old vines. Gautheron d'Anost works in small volumes, ferments on ambient yeast, uses a fraction of barrel with the rest in stainless, and keeps élevage short. Sulfur goes in at the start of fermentation and then not again until bottling. Lemon zest, apricot, a floral edge, creamy in texture with lively acidity and a saline, persistent finish. On 2024: the Côte Chalonnaise caught the April frost along with the Hautes-Côtes and Chablis, and losses across the region were significant, but southern Burgundy outperformed the north qualitatively in this vintage. The wines came in lower in alcohol and higher in acid than the recent norm, which for Aligoté is not a compromise. It is the target.

The People

Bastien Gautheron founded Maison Gautheron d'Anost in 2020, first generation, with no domaine behind him. Anost is a Morvan village west of the Côte d'Or where his mother's family comes from. He began oenology at 15, trained at the Lycée Viticole de Beaune, worked at Olivier Leflaive in Puligny-Montrachet until 2019, and now makes roughly 12,000 bottles a year out of a converted warehouse in Dijon's Arsenal district. About a fifth of production comes from his own vines in Savigny-lès-Beaune and the Hautes Côtes de Beaune, certified organic since 2017; the rest is bought fruit from growers farming organically or effectively so, not all of it certified. This bottle illustrates the strategy well. Rather than fight for allocations in the famous villages, he goes to appellations where the wine is better than the reputation and finds growers with old vines in them.

Food Pairing

Bouzeron is the Aligoté that can carry a course rather than just the hour before one. That warmth is exactly what a no-additive white needs — fruit picked ripe and clean enough to survive élevage without a safety net. The grapes for this Mâcon-Villages come from growers who are certified biodynamic or in conversion, because de Nicolay will only buy fruit farmed well enough to ferment on its own. De Nicolay purchases whole grapes, ferments them spontaneously, and raises the wine in neutral barrels without pumping over, bottling by hand at 13 percent alcohol. The 2022 vintage gave the Mâconnais a warm, dry summer and a ripe, healthy crop that kept more freshness than anyone expected in September. In the glass: pear and white peach, a floral topnote, then a round, saline mid-weight texture that finishes with chalky grip rather than butter. Because it carries no added sulfur, keep it cool and drink it over its youth — this is Chardonnay from the Mâconnais as pure juice, not as technique.

The People

François de Nicolay co-directs Domaine Chandon de Briailles, his family's estate in Savigny-lès-Beaune since 1834, holding vines in Corton Grand Cru and Pernand-Vergelesses and certified organic and biodynamic — Ecocert and Demeter — since 2011. His personal négociant label, Maison François de Nicolay, applies the same convictions to purchased fruit: whole grapes or fresh must only, from organic and biodynamic growers, vinified without additives of any kind. Where most négociant wine is a volume business, his is a farming filter — the label exists so that well-grown Mâconnais fruit can become naturally made Burgundy at a price the Côte d'Or no longer allows.

Food Pairing

Roast chicken with tarragon cream sauce is the classic move — the wine's roundness meets the cream while its acidity resets each bite.
