Domaine Armand Heitz is located in Chassagne-Montrachet and was founded in the mid-1980s by Armand Heitz’s parents Brigette and Christian with initially just 5 hectares. Armand studied oenology and then decided to take over his family’s vines after completing his studies in 2011. For years, his mother, Brigette had contracted these vines to Maison Joseph Drouhin. And since taking over Armand has sought about regaining control of more of the vines under the domaine. He made his first vintage in 2013 with the help of consulting oenologist Ludovic Pierrot who had spent eight years working with Anne-Claude Leflaive at Domaine Leflaive. Armand farms the vineyards using biodynamic practices and his winemaking style is traditional in approach with the use of new oak kept at a minimum, usually around just 20-25%.

The Land

The Domaine Yvon Clerget Volnay Clos du Verseuil Monopole 2022 is a singular expression of Volnay, sourced entirely from the family's exclusive 0.68-hectare Clos du Verseuil vineyard. The vineyard's north-south vine row orientation mirrors those of other prestigious sites like Clos de Tart, Clos des Lambrays, La Tâche, La Grand Rue, La Romanée, and Cros Parantoux. The nose is complex and fragrant, with aromas of red cherry, raspberry, and wild strawberry, intertwined with subtle notes of rose petal, spice, and a hint of forest floor. On the palate, the wine exhibits a refined structure, with silky tannins and a bright, precise acidity. Its flavors of red fruit and earth are balanced by a delicate minerality. The domaine's modern history began in 1936, with the acquisition of the Clos du Verseuil 1er Cru in Volnay. In 1983, Yvon Clerget took over winemaking, and when he was ready to retire in 2009, his son Thibaud was still too young. Yvon sold grapes to Henri Boillot until Thibaud completed his studies and an internship at Domaine Hudelot-Noellat. Thibaud took the lead of his family domaine in 2015, at the age of 24. The domaine's focus remains on sustainable viticulture with minimal intervention in the cellar, ensuring that the purity of the fruit and unique qualities of the terroir are expressed in each wine.

The Land

This is an exceptional Grand Cru from the famed Musigny vineyard, located in the heart of the Côte de Nuits. Within this single vineyard, smaller “climats” such as Les Larrets, Les Bouchots, and Le Meix-Rentier each bring their own nuances—elegance from the shallower topsoils higher up, backbone from the deeper deposits below, and a later-ripening facet in the northernmost section near the Morey Combe. wine sourced from anywhere in Burgundy, often blended across multiple villages. Cuvée Sylvie is different. It comes entirely from the Pressonnier parcel, a 0.80-hectare plot within Gevrey-Chambertin itself, subject to the same clay-limestone soils and east-facing exposure as the village and premier cru appellations that surround it. The Côte de Nuits sits at roughly 250–280 meters above sea level, with soils transitioning from thin limestone on the upper slopes to richer clay-limestone lower down. That clay element, more pronounced in Gevrey than in Chambolle or Morey to the south, gives even the most modest wines from this village a structural backbone and savory character that generic Bourgogne from elsewhere rarely achieves.

The Wine

100% Pinot Noir, approximately 90% destemmed, fermented in open wooden vats with moderate extraction over roughly two weeks. The 2023 vintage was defined by significant heat waves in August and September, producing warm, concentrated fruit across the Côte de Nuits. Cuvée Sylvie in 2023 is generous and forward: dark cherry, forest floor, a thread of violets, and soft tannins with a clean, direct finish. Like all of Sylvie's wines, it can show a reductive note right on opening. Give it 15–20 minutes in the glass and it opens cleanly. Bottled unfined and unfiltered.

The People

Sylvie Esmonin took over the family domaine from her father Michel in 1986. Before Sylvie arrived, the estate had sold its fruit to négociants. She changed course immediately, completing the first domaine bottling in 1989 from 3 hectares. The estate now covers 7.8 hectares across Gevrey-Chambertin. The family connection to Clos Saint-Jacques runs a generation deeper: Sylvie's grandfather worked for the Comte de Moucheron, then sole owner of the entire Clos Saint-Jacques vineyard, and purchased part of it when the count was forced to sell. Sylvie has farmed without herbicides since 1990 and works the entire domaine in practicing organic viticulture throughout, not certified but genuinely committed. Positioned above the village on the hillside, higher in elevation than the grand cru vineyards that run along the mid-slope, it sits on thin Bathonian limestone with excellent drainage and a gradient steep enough to limit yields naturally. The 6.7-hectare clos is divided among only five producers in the world, making it one of the most tightly held and precisely documented single vineyards in Gevrey-Chambertin. Sylvie's parcel of 1.6 hectares is the northernmost of the five, where cooler exposure extends the growing season and adds tension and definition to the finished wine that the warmer southern exposures cannot replicate.

The Wine
100% Pinot Noir from vines planted 45–55 years ago, fermented with 60–80% whole clusters (reaching 100% in select vintages) in open wooden vats over 13–14 days. The wine finishes fermenting and ages in approximately 80% new French oak, a significant proportion, but one the concentration and structure of this site absorbs without the wine ever reading as oaky. The 2023 vintage ran hot, with heat waves in August and September; strict fruit selection was essential. The result is a wine of real density and depth: dark cherry, black plum, dried flowers, iron, and a deep mineral core on the nose. The palate is structured and powerful, with fine-grained tannins, a long savory mid-palate, and a finish that extends for what feels like a full minute. Likely 15–20 years of aging ahead. Decant for at least 30–45 minutes, or lay it down and wait.

The People
Sylvie Esmonin's connection to Clos Saint-Jacques is generational. Sylvie took over the domaine in 1986, converted it from négociant sales to estate bottling, and made the first domaine wine in 1989. She trained in oenology in Dijon and brought a scientist's rigor to vineyards that were already exceptional raw material. No herbicides since 1990; the entire domaine is farmed in practicing organic viticulture, not certified. Vinification is traditional: open wooden vats, native fermentation, gravity racking, no fining or filtration. Dominique came to winemaking from a career as an air force technician and learned his craft largely through proximity to his neighbors: Christophe Roumier and Frédéric Mugnier have both served as informal mentors. The village sits just north of Pommard with a few hundred meters of slope between them, but the soils tell a completely different story. Where Pommard's clay-iron base drives tannin and structure, Volnay's limestone and sand produce wines that seem almost weightless by comparison. Le Ronceret occupies a central position within Volnay's premier cru belt, not at the Meursault end like Santenots, not at the Pommard border like Les Brouillards, but in the heart of the appellation where the commune's character is most directly expressed. The soil here is notably poor and thin over the limestone bedrock, which pushes vine roots deep in search of water and nutrients. That depth is what gives Le Ronceret its complexity and length relative to its neighbors.

The Wine

100% Pinot Noir from Glantenay's Le Ronceret holdings, hand-harvested and fully destemmed. Short cold soak, then fermentation with indigenous yeasts over 10 to 15 days with light infusion-style extraction that keeps the tannins fine and the fruit expressive. Aged 14 to 16 months in barrel with 30 to 50% new oak for premier crus, then 4 to 6 weeks in tank before bottling. No filtration. The 2023 vintage brought ripe, juicy reds with good maturity across the Côte de Beaune, comparable in character to 2019, with each site expressing its own personality clearly. Le Ronceret in 2023 shows ripe cherry, violet, dried rose petal, a thread of iron and spice, and a long, silky finish that is the hallmark of good Volnay premier cru. Since then, they have progressively reclaimed vineyard contracts and built a 10-hectare estate-bottled program spanning 16 appellations in Volnay, Pommard, Chambolle-Musigny, and Meursault. A significant part of that portfolio is defined by vine age: their grandfather Georges planted much of the current holdings in the 1950s and 1960s, giving the domaine an average vine age of over 60 years. Where Volnay rests on the lighter limestone and sandy soils that give Côte de Beaune Pinot Noir its signature elegance, Pommard sits on heavier clay-rich soils with more iron content, producing wines of deeper color, firmer tannin, and longer cellaring potential. The village appellation draws from parcels across the commune at elevations from roughly 230 to 300 meters, with a mix of east and southeast exposures. Pommard's character is about structure, not delicacy, and the distinction from Volnay comes through even in basic village wines. The northeastern flank of the hill of Corton lies inside the commune, which means Ladoix quietly owns grand cru ground: parcels of Corton and Corton-Charlemagne in Hautes Mourottes, Rognet, Les Vergennes, Clos des Vergennes, and Grandes Lolieres carry a grand cru name that never mentions the village they grow in. Eleven more climats here rank as premier cru. The soils change as you climb: pebbly, reddish, iron-rich oolite with heavy limestone and marl at the top, reddish-brown calcareous ground littered with limestone debris mid-slope, and clay at the foot of the hill that pulls some of the fire out. Obscurity next to that kind of neighbor is the whole value story.

The Wine

Pinot Noir at 25 years, from a vintage worth reconsidering. 2001 gets written off, mostly because of an August 2 hailstorm that gutted Volnay, Pommard, and part of Monthelie. Quality improved the further north you went, and Beaune and Aloxe-Corton fared better than Santenay and Saint-Aubin. Ladoix sits on the right side of that line, immediately next to Aloxe-Corton. The 2001s also turned out less lean and tannic than their first reviews suggested, with enough ripe fruit under the structure to carry them. Twenty-five years in, expect garnet with a brick rim, translucent to the base of the glass, and dried cherry, forest floor, mushroom, tea leaf, dried orange peel, and the iron note this ground gives. Tannins have resolved into texture rather than grip. Forty-eight hours upright is plenty for a wine carrying this little sediment. Ease the cork rather than yanking it, decant, and plan on finishing the bottle inside an hour instead of letting it sit open. Pour at 60 to 62 degrees. Old bottles vary, and storage history matters more than anything printed on the label.

The People

Domaine Prin is where our research stops. We found no producer website, no importer, and no estate record we are prepared to cite, and we will not manufacture a founding date or a farming claim to fill the space. What is true of the village generally: Ladoix is worked almost entirely by small family growers, many with a row or two inside the Corton boundary, and for most of the 20th century the majority of that fruit went to negociants in Beaune and Nuits-Saint-Georges rather than into estate bottles. A domaine-bottled Ladoix from 2001 is a grower who chose to keep some back. That decision is the story we can actually vouch for.

Food Pairing

Roast guinea hen or a good chicken, with morels in a light cream sauce, is the classic Cote de Beaune answer and the right one here. A beet and endive salad with fresh goat cheese and walnuts picks up the earth and iron without weight. Saint-Nectaire, nutty and semi-soft, sits right on the wine's texture. Buttered egg noodles with mushrooms and parsley need nothing else.
