Based in Montigny-lès-Arsures, near Arbois, the estate benefits from the region’s distinctive marl soils and cool alpine-influenced climate—ideal for Savagnin. These conditions, coupled with meticulous organic and biodynamic farming, create wines of striking clarity and depth. Vin Jaune, Jura’s legendary oxidative wine, thrives here, aging under a veil of yeast (“sous voile”) that enhances complexity and structure.

The Wine:

Aged for over six years in neutral barrels without topping up, the 2016 Vin Jaune is a textbook expression of the style—intensely aromatic and layered. Classic notes of roasted nuts, dried apricot, curry spice, and preserved lemon unfold on a structured, saline-driven palate. The oxidative aging builds texture and depth while maintaining Jura’s hallmark vibrancy. This is a wine built for aging, with the potential to evolve for decades.

The People:

Domaine du Pélican is the Jura project of Guillaume d’Angerville, of Volnay’s famed Domaine Marquis d’Angerville. Drawn to the region’s untapped potential, he assembled vineyards from some of Jura’s most respected growers, applying Burgundian know-how to Jura’s indigenous varieties. The result is a lineup of precise, expressive wines that respect both tradition and terroir. Vin Jaune, the pinnacle of the estate’s work, is a testament to this philosophy—pure, focused, and deeply connected to Jura’s winemaking heritage.

The Land

Clos Saint-Laurent sits directly behind the winery in Montigny-lès-Arsures, at roughly 350 meters. The soil is éboulis calcaires, scree of Bajocian limestone, lying over grey Lias marl, and the vines planted in it range from 10 to 45 years old. Bajocian limestone is the same Middle Jurassic rock that builds the best slopes of the Côte de Nuits; the two regions were laid down in the same shallow sea and later separated by the rift valley the Saône now runs through. Montigny-lès-Arsures is better known as the capital of Trousseau, which makes a serious Pinot Noir parcel here slightly unexpected. This is the estate's home vineyard in the most literal sense, since the cellar is built into its slope.

The Wine

Pinot Noir in the Jura usually disappears into a blend. Domaine du Pélican's own Trois Cépages is 60 percent Pinot Noir, 35 percent Trousseau, and 5 percent Poulsard, and for the estate's first six years that is where the Pinot went. A varietal bottling did not appear until 2018, and the delay was deliberate: the team was not confident it could handle Pinot Noir outside Burgundy and waited until it was. The wine ages in a combination of Burgundy barrels, 60 percent, and vats, 40 percent, with no new oak anywhere. Sour cherry, cranberry, wild raspberry, dried violet, and a wet-limestone bite, with fine-grained tannin and acidity that runs high even by Pinot standards. 2024 was a punishing year in the Jura, with April frost, a soaking spring and summer, and relentless downy mildew that cut yields dramatically.

The People

Day-to-day work here belongs to François Duvivier, who came over from the d'Angerville cellars in Volnay to run the Jura estate and has spent more than a decade adapting Burgundian training to Jurassic ground. Farming is biodynamic in practice rather than in slogan: low-dose treatments timed to the lunar calendar, soils opened with a plow instead of herbicide, and any plot that gets pulled out sown with green manure for three years before it is replanted. Organic compost goes on periodically to keep the microbial life going. In December 2020 the team moved into new cellars dug into the hillside at the base of Clos Saint-Laurent, the roof planted over so that it runs straight into the vineyard above.

Food Pairing

Duck breast, rendered hard and served rare with a cherry or blackcurrant reduction, is the obvious call and the right one; the acidity cuts the fat and the red fruit meets the sauce. Roast pork loin with prunes plays the same register. Coq au vin built on a light red rather than a heavy one lets the wine sit inside the dish and beside it at once. For something simpler, a mushroom risotto finished with parmesan gives the earthiness somewhere to land. Serve it lightly chilled, around 60 degrees, and it will carry a fall dinner without taking over the table.

The Land

Domaine du Pélican's Savagnin comes from two Arbois parcels, Au Barby and Grand Curoulet, both on old soils rich in Jurassic marl and what the Jura calls terre de gryphées, marl packed with the fossilized shells of a prehistoric oyster. The distinction matters: the marl in Burgundy is white, while the Jura's runs grey and blue, and the two regions' limestones formed at the same moment before an ancient rift valley split them apart along the Saône. Grand Curoulet faces north on a hillside above the town of Arbois and the plain beyond, exposed and windy, and it ripens later than anything else the estate farms. Cold winters, a short season, and marl that stays wet: this is Savagnin's home ground.

The Wine

Ouillé is the whole point of this bottle. Most people meet Savagnin as vin jaune, aged a minimum of six years and three months in a barrel deliberately left unfilled so a veil of yeast forms across the surface, giving the nutty, curry-spiced, oxidative character the Jura is famous for. Ouillé means the opposite: the barrels are topped up throughout aging, no veil ever forms, and the grape arrives fresh and direct. Here the fruit ferments in 500-liter barrels and ages ten months in neutral 350-liter barrels. Green apple, quince, lemon pith, crushed hazelnut, white pepper, and a hard saline edge, with acidity that lands closer to Riesling than to white Burgundy. 2024 was brutal in the Jura: April frost, a wet spring and summer, and constant downy mildew pressure that pushed yields dramatically low. What survived is concentrated and taut.

The People

Domaine du Pélican started with a blind tasting. Guillaume d'Angerville, whose family runs one of Volnay's benchmark estates, had a standing request at a Paris restaurant: pour me something blind, anything but Burgundy. The sommelier brought a Jura Chardonnay, d'Angerville called it Burgundy, and he went looking for vineyards in the Jura. In 2012 he leased Château de Chavanes in Montigny-lès-Arsures, gaining five hectares of biodynamically farmed vines replanted a decade earlier, and added another five that had never seen chemicals. In 2014, when Jacques Puffeney announced his retirement, d'Angerville took over four hectares of his holdings. That sequence is why this domaine had a serious Arbois vineyard portfolio almost immediately.

Food Pairing

Comté, ideally 18 months or older, is the reflexive Jura pairing and it works because the wine's salinity meets the cheese's crystalline crunch head-on. Chicken thighs braised with cream, mushrooms, and a splash of the wine itself get a lift from the acidity that a richer white would not provide. Grilled trout with almonds and brown butter is the freshwater version of the same idea. For something less Alpine, sear scallops hard and finish them with lemon, or work through a platter of raw oysters. Non-oxidative Savagnin like this is the bottle to keep in the door of the fridge for the nights you actually cook.
