Les Sentiers means "the paths," after the tracks that cross at the edges of the climat. It lies at the northern end of Chambolle-Musigny, near the Morey-Saint-Denis border, directly downslope from Bonnes-Mares with only the Route des Grands Crus between them. Where much of Chambolle is thin soil over hard limestone, Les Sentiers has deeper ground: substantial clay mixed with limestone from several geological periods, so soil and subsoil change within a few rows. That clay tends to give Chambolle more weight and darker fruit than the stonier sites. The Sigauts work a single plot here, and the old vines explain the Vieilles Vignes on the label.

The Wine

One hundred percent Pinot Noir. The Sigauts hand harvest, sort in the vineyard and the cellar, destem, and ferment with indigenous yeasts over about three weeks of gentle maceration. Gravity carries the wine to barrel for 15 to 16 months of aging, with new oak kept between 10 and 25% depending on the cuvée, followed by a single racking and bottling without fining or filtration. From vines now more than 75 years old, it shows black cherry and blackcurrant with a twist of black pepper and violet. The palate is broad, the tannin silky, the finish long and floral. 2023 was Burgundy's warmest year on record yet a relatively cool growing season for Pinot Noir, with flowering around May 29 that set a very large crop. Green harvesting was the norm. The domaine started picking on September 9 with clean fruit that needed little sorting, and the vintage's reds carry perfume and a fresh, saline finish without overripeness.

The People

Maurice Sigaut began bottling in the early 1950s, and Les Sentiers was among the first wines he sent out, most of it quickly exported. The family had come over from Morey-Saint-Denis more than a century earlier. Maurice's son Hervé took over his mother Andrée's vines in 1977 and later combined them with his father's. Anne, who left a career as a decorator in Nancy, joined for the 1984 harvest, took charge of vinification in 2004, and has led the domaine since 2008. Roughly 7 hectares, farmed organic from flowering onward, guided by the lunar calendar, some parcels ploughed by horse. The Sigauts have stopped using herbicides entirely and green harvest every year. The Sentiers Vieilles Vignes is the clearest case for what patience in the vineyard produces.

Food Pairing

The domaine suggests capon, and a roast capon or big farm chicken finished with a morel and cream sauce is exactly the right weight for the wine's breadth. Pan-roasted veal chop with sage brown butter lets the silky tannin sit against lean, sweet meat. Duck confit over lentils du Puy with lardons brings salt and fat for the black fruit and acid to cut. For cheese, a young Époisses, whose pungent rind the clay-grown depth of this wine can stand up to. Chambolle-Musigny premier cru from 1947 vines is the bottle for a long Sunday dinner, the kind where nobody checks the time.

https://danverwinemerchant.com/products/domaine-anne-et-herve-sigaut-chambolle-musigny-1er-cru-les-sentiers-vieilles-vignes-2023
