It opens west toward the Adriatic and the Friulian plain, so warm sea air flows up it, while the high Karst plateaus on its flanks send down the burja, a dry northeasterly that can exceed 100 kilometers per hour. That collision of Mediterranean warmth and continental wind is the valley's whole character. Vineyards climb from 80 meters on the valley floor to around 400 meters, and the best sit on flysch, alternating bands of marl and sandstone. Around Goče in the upper valley the marl is bright white, known locally as ponca, and it gives Sauvignon Blanc from the Vipava Valley a stony, mineral frame. Wind-dried canopies, cool nights at elevation and lean soils keep the fruit fresh.

The Wine

The Hedele Vipavska Dolina Sauvignon Goče 2022 is 100 percent Sauvignon Blanc from the estate's vineyards around the village. The importer's notes point to Hedele's single southeast-facing vineyard at 380 meters as the source of the estate's Sauvignon. Grapes are hand-picked, pressed gently and fermented in small oak vats, and in past vintages the wine spent about 12 months in barrique. That time in wood shows as texture: earlier releases have been golden-tinged, with elderflower, passion fruit, smoke and flint on the nose, then a full, oily palate and the freshness to age several years. Expect the same frame here. 2022 was a drought year across Slovenia, dry from autumn 2021 and marked by repeated summer heat waves, which favors ripeness and concentration over leanness.

The People

Goče is the point of this wine. The stone village sits on a ridge between the Vipava and Branica valleys, first appears in 14th-century records, and grew rich in the 18th century supplying wine to Trieste and the Viennese court. A 19th-century account claimed it had more cellars than houses, and about sixty vaulted stone cellars survive today, many still aging wine in wooden casks. Andrea Pittana, a Friuli-trained viticulturist, began buying vineyards here in 2011 and built Kmetija Hedele around the village's terraces. He farms organically, without irrigation, and picks by hand. Bottling the wine under the village name is a statement: Goče has been making serious white wine for centuries, and Pittana wants it read that way.

Food Pairing

This is a Sauvignon with enough body for dinner. Roast chicken with tarragon, garlic and white wine pan juices is the first call, since the wine's herbal side meets the tarragon and its acidity cuts the skin. Grilled branzino with olive oil, lemon and fennel works on salinity. Pork schnitzel with potato salad dressed in vinegar and chives echoes the valley's Austro-Hungarian kitchen. For a vegetarian plate, try roasted beets with whipped feta and toasted walnuts, where acidity lifts the cheese. It is the kind of white that turns a weeknight roast chicken into a reason to sit down.
